Middle Eastern bento

[laptop lunchbox with falafel, mini-pita breads, tomato, cucumber, tzaziki sauce, hummus, crackers, couscous]

Top left: roasted garlic & olive oil couscous (Near East brand) with fresh tomatoes and scallions
Top right: tzaziki sauce with tomato garnish
Bottom right: cucumber and tomato slices, small container of hummus
Bottom left: falafel patties (Casbah brand)
Side: onion-flavored crackers (Mary's Gone Crackers brand)
Plus: whole wheat mini-pita breads (from Trader Joe's)


Here's another hubby bento. I packed him fixins for mini-falafel pita sandwiches (I got a smaller version of the same thing). I forgot the lettuce -- whoopsies. All in all, this is a fairly quick bento meal. The couscous takes 5 minutes to cook once the water boils, and the falafel mixture needs to sit 10 minutes before you form it into patties and fry for a minute on each side. It took me a little longer this morning because I made the entire box of falafel mix, which makes about 26-28 mini-pita-sized patties. If the falafel patties were already made, or if I had only made what I needed, this one would have been a breeze!
