Chicken dumplings

[bento with chicken dumplings, veggie stir-fry, rice]

Top: rice with furikake
Bottom: chicken dumplings wrapped in nori and sesame leaves, stir-fried broccoli and red & yellow bell peppers with ginger scallion sauce
Dessert: (not pictured) minneola

The version I made for my hubby is on the right (using one of the bento boxes I bought from The Container Store). I would have used his new Urban Style bento, but he left it at work yesterday. :P

Anyhoo, I actually found some naganegi at the H Mart over the weekend, so I used it to make a double batch of chicken dumplings this morning (I put the extra cooked dumplings in the freezer). I was a bit loopy, however, and forgot that I actually quadrupled the recipe (to make 16 dumplings - 2 batches of 4 dumplings each for me and my hubs) and went and only made 8 giant dumplings instead of 16 normal ones. Whoopsie. It ended up working out though -- I sliced them in half, which allowed them to fit in the bento boxes and also allowed me to check to make sure they were cooked all the way through. ;)
