[mandarin orange chicken bento]

Top: mango slices, red & white daifuku, ginger chews, white rice
Bottom: steamed broccoli, mandarin orange chicken, sauce for chicken



A super-easy bento lunch today. I pan-fried some Trader Ming's Mandarin Orange Chicken (about $4.50 for five 1-cup servings) until it was crispy and then added some steamed broccoli. I packaged the sauce separately so that the chicken wouldn't get soggy by lunchtime -- I also drained the chicken on paper towels and allowed them to cool to room temperature before closing the lid of the bento to nix any condensation issues. So too the daifuku were wrapped in order to make sure they didn't get sogged by the mango.
